Twin Spin

As part of a summer bucket list, Faith and I decided to get matching bikes.
 She brought over mine to me one night.
  Look how cute it is on the bike rack. 
 Kim and Kyle taking off the tags and checking the air in the tires.
I have not been on a bike since the Remington house.  I guess the saying is true about learning to ride a bike.  You never forget.
On another visit we went on a bike ride together.  We rode through the Saratoga Springs neighborhood across Redwood Road.  Then at work a few days later a boy came through to pick up copies and he said he saw me riding my bike in his neighborhood with my twin.  How cute is that??

First Day Back at School

On my first day back at work, my cute Alida came into the copy center carrying these pretty flowers complete with a hug.  She just wanted me to feel loved.  She is always so thoughtful.  



As a side note as August is over and we are into September. 
 Where did August go??
 It is always so busy getting the room ready to open.  Preparing mailboxes and sorting the mail.  Checking in freight and making copies.  Then the first days come and I don't come up for air until now.  A lot of extra hours banked to use later. 

 This year was especially interesting with a bomb threat on our first day.  The first day for students was cancelled but the teachers still came and did prep work   A lot of them needed that extra day.  As a result of the the first day being a no show for the students and it being an A day all prepared for, the teachers prepped for a B day and I was left working an 13 hour day. 
 :(    
Soon enough I got all caught up and the last few days have been great. 

4 friends

It is our tradition to get together at the end of summer.  We've been doing it for years.  How wonderful it is to be with good friends.  As Faith, I and Denise approach 50 years old this year, we marvel at how long we have been friends.  We met when we were 12, a lifetime ago.  
This year we went to Janine's home in Springville.  We were treated to a delicious salad and bread outdoors with everything so special.  Then the dessert was served and it was the best!! Mini frozen desserts in small half pint canning jars.  As she pulled them out of the freezer to serve them to us her smile was priceless.
Man, they were good. 

MUFFIN WEEK

As a farewell to summer and the end of Try It Tuesdays for the summer, we had MUFFIN WEEK.

It was declared the best week ever.  Even as I prepare this post a month later someone came in and remarked, "Oh, I loved that week!"

 Here's a helpful tip.....muffin cups in a canning jar..easy to store.
 Items assembled
 The muffins were banana crumb, best blueberry and banana-coconut, and pumpkin chocolate chip thrown in for good measure. They were all new recipes for us to try.
 All were keepers. I declared muffins weren't as hard to make as I expected or as time consuming.  
The kids sure liked waking up this week to a good smell and a warm muffin.
 The week finished with cookies made from raspberry muffin mix.
 These are truly the softest best cookies.  We also put in macadamia nuts, white chocolate chips  and coconut.

Try It Tuesday #7

I love everything LEMON!! 

This Try it Tuesday was taken from a cookbook my mom gave me a few years ago.  This is why I dreamed up Try it Tuesday.....to make things like this cake.  You know you thumb through recipes and cookbooks and think, "I will make that someday."  This is true with this cookbook, every recipe looks good.  

Triple Lemon Cake
Cake:
1 lemon cake mix
1 3 oz pkg lemon jello
4 eggs
3/4 cup oil
3/4 cup water

In a large mixer bowl, combine cake mix, jello, eggs, oil and water.  
Beat on medium speed for 4 minutes.
Spread batter in greased 9 x 13 pan.
Bake 35 minutes or until pick inserted into cake comes out clean.
Cool for about 20 minutes.

Glaze:
2 cups powdered sugar
1/3 cup lemon juice

Poke holes in cake with fork.
Whisk powdered sugar and lemon juice together until sugar dissolves.
Pour evenly over top of the cake.
Cool completely before cutting.







This cake was so good.  I hate lemon stuff that tastes like eggs.
  I  was worried when I saw 4 eggs going into this recipe.  No worries!!! Not an eggy tasting cake.

A Summer Celebration of Song


I was watching the noon news in June, the early part of the month.  I saw that you could email and ask for ticket for this concert.  As the time drew near, I was glad I had requested tickets early.  They sold out.  I had expected Kelsi and Logan to go but they changed their mind. 

The concert was amazing.  A man came from Broadway and him with the choir and orchestra sang and played Disney songs.  He gave monologue between the songs and he was so fun to listen to.

Try It Tuesday #6

Hot Hot Hot day today.

 I planned this meal knowing it was going to be hot and also knowing that I was talking Kelsi back to UVU to retest her English score.

 It was 102 at UVU and I was reading in the parking lot drinking a Diet Mt Dew. It was so hot driving back and forth with no air conditioning, I almost lost my breath. The good news she passed with a score of 95. She is on the waiting lists of several English classes and the funny thing is they are all on the same time slot. 

This week's Try It Tuesday was a salad

 I got the recipe from the cookbook "What's for Dinner"

 It was so good I will definitely make it again. 

 I know you seasoned cooks don't need a recipe for Chef Salad

 I did! And as a side note, no eggs!! 



Jake said this was the best thing I have made and he has requested it again.. 
 Dad look at all my pepper on my plate!!

Have you tried the frozen biscuits??? Delicious!!!

Chef Salad
1 head lettuce
1 cucumber, sliced
3 green onions, sliced
1 cup chopped celery
2 tomatoes, quartered
1/4 inch Swiss cheese (I used white Jack)
1/4 inch thick turkey slice
1/4 inch thick ham slice
1/4 inch cheddar cheese
croutons

Tear lettuce into large bowl.  Add cucumber, onions, and celery.  Toss.  Cut cheeses and meats into 2 inch cubes.  Arrange cheeses, meats, tomatoes on top.  Serve with dressing and croutons.  


I layered mine in a pretty dish.  I used my favorite homemade Ranch.
 I purchased the meat at the deli counter asking them to cut me a thick slice.
